We're a six-person bakehouse devoted to slow-fermented sourdough, honest pastry, and coffee roasted twenty minutes up the road. Everything on the counter was dough at 4 a.m.
Our craft
Good bread can't be rushed, so we don't rush it.
Every loaf starts two days before you meet it: flour milled in Central Texas, a starter named Clementine that's older than the shop, and a long, cold ferment that trades speed for flavor. We'd rather sell out than cut the proof short.
Small batch, slow ferment
Thirty-six hours minimum on every sourdough. Flavor is mostly patience.
Texas flour first
Our grain comes from Barton Springs Mill in Dripping Springs — fresher flour, better crumb.
Coffee roasted weekly
Beans come from an Austin roaster twenty minutes away, never more than seven days off the roast.
